Chicken Mang Inasal version 2
4 large chicken legs (thigh with the drumstick attached) cut shallow slices on the outer part of the thigh
3 tablespoon coconut or cane vinegar
6 calamansi, juiced with seeds removed
2 tablespoon light soy sauce
1 tablespoon rock salt
2 tablespoon annato oil (recipe below)
2 tablespoons melted butter
3 stalks of lemon grass, chopped
1 1/2 tablespoons Garlic, pounded and chopped
1 tablespoon chopped ginger
1 tablespoon rock salt
1/4 teaspoon ground black pepper
1 ½ tablespoon brown sugar
Combine all ingredients except for the chicken, butter and brown sugar. Transfer this mixture in a large container large enough to fit the chicken pieces. With your hands, coat every chicken part placing the garlic pieces in between the cuts in chicken. Marinade for 2 hours.
Barbecue over a preheated grill turning the chicken inasal over every few minutes to prevent burning.
Annato (achuete) oil: Melt some butter and add sugar and 1 tbsp. of annato (achuete) powder. Take off the heat and mix. Use this to brush the chicken inasal while cooking over the charcoal.
For the spiced vinegar:
1/2 cup cane vinegar
4 cloves of garlic, pounded
2 tsp. salt
1 teaspoon sugar
Combine all ingredients in a bowl and use as a dip for your delicious chicken inasal.
